Despite its name, the Pig will serve vegetarian options when it opens this spring on 14th Street NW. My only question: Why you would want to skimp on porky goodness at a namesake restaurant?
At any rate,Â WashingtonianÂ released more menu direction from chef Garret Fleming. Think pork belly on your eggs benny and some damn good charcuterie. This also raises an interesting question: What you do when a niche (nose to tail, farm to plate) becomes de rigueur for discerning diners?
