Despite its name, the Pig will serve vegetarian options when it opens this spring on 14th Street NW. My only question: Why you would want to skimp on porky goodness at a namesake restaurant?
At any rate, Washingtonian released more menu direction from chef Garret Fleming. Think pork belly on your eggs benny and some damn good charcuterie. This also raises an interesting question: What you do when a niche (nose to tail, farm to plate) becomes de rigueur for discerning diners?
Back in December, owner EatWell DC announced that the chef for The Pig would be Garret Fleming. He has worked in places including Eatonville and The Lincoln here in DC and hails from the East Coast, in areas spanning Charleston to Maine.
